Ingredients
  • ½ cup Mixed lentils
  • 1 Carrot
  • 1 Onion
  • 1 Green Bell Pepper (Capsicum)
  • 1 Celery
  • 2 inch Ginger , sliced
  • 1 Fresh Red Chilli
  • 2-1/2 cup Vegetable stock
  • 1 teaspoon Dark soy sauce
  • 1 teaspoon Sesame oil
  • ¼ teaspoon Sesame seeds (Til seeds)
  • 2 Spring Onions (Scallion)
  • Salt , to taste
Instructions
  1. To begin making the Asian Carrot Ginger Lentil Soup recipe, wash the lentil and soak for 5 minutes.
  2. Cut the vegetables in chunks and the scallion into long thin strips. Heat a medium saucepan with oil, ginger, red chilli and sesame seed. Let it cook for about 15 seconds.
  3. After 15 seconds, add the celery and onions fry for a minute. After a minute, add rest of the vegetables. Mix it properly and let it cook for another minute.
  4. After a minute, add the water and lentil. Let it fully cook until the grains start to break. Add soya sauce and salt. Pour the soup in a big soup bowl and garnish with scallions on top.

  • 1 cup Basmati rice
  • 4 teaspoon Ghee
  • 2 teaspoon Ginger garlic paste
  • 2 Onion , sliced
  • 2 teaspoon Biryani Masala
  • 3 teaspoon Lemon juice
  • Salt , to taste
  • 200 gram Paneer (Homemade Cottage Cheese) , cubed
  • 1 teaspoon Turmeric powder (Haldi)
  • 1 teaspoon Red chilli powder
  • 2 teaspoon Homemade tomato puree
  • 4 teaspoon Hung Yogurt (Greek/ Thick Curd)
  • 1 teaspoon Lemon juice
  • ½ teaspoon Ginger garlic paste
  • 2 teaspoon Cooking oil
  • Salt , to taste
Instructions
  1. To begin making the Paneer Malai Makhani Biryani recipe, the first step is to wash the rice and soak for 10 minutes.
  2. Heat a heavy bottomed pot with enough boiling water and add rice for cooking. Strain the rice just before the grain is fully cooked.
  3. Spread on a platter and cool it.
  4. Cut the paneer in barfi shape. Take a wide glass bowl and mix together red chilli powder, turmeric powder, tomato puree, curd, lime juice and salt. Add the paneer to the mix and coat well. Leave it for 5 minutes
  5. Heat a frying pan with oil and fry the marinated paneer for 5 to 8 minutes. Cook till paneer turn brown from both the sides. Remove the cubes from the pan and keep it aside.
  6. Sprinkle lime juice and salt on rice then carefully run the fork through the rice to mix it up without breaking the grains.
  7. Heat a big wok with ghee on low flame, add onion and fry till golden brownish and remove.
  8. In the same wok, add the rice, ¾ fried onions and the biryani masala. Cook for about a minute or two.
  9. Now, to layer the biryani, add the rice in a platter, then put the paneer mixture on it and garnish it with the remaining fried onions.

Uttarakhand is my favourite summertime holiday spot, and we never miss it. Apart from being a popular tourist destination it similarly shares a popular vegan cuisine. A high protein vegan recipe is a must make for every family which is simply cooked and it helps in digestion especially when you are travelling. Bhaddu is actually an alloy pot they use to soak and cook the lentils for long hours. Hence the name and the local addition of selective ingredients and exploring on making tasty protein meal is highly praised by all.
Ingredients
  • ¼ cup Rajma (Large Kidney Beans)
  • ¼ cup Urad dal
  • 3 teaspoon Cooking oil
  • 1 teaspoon Ginger garlic paste
  • 2 Cardamom (Pods /Seeds)
  • 1 Bay leaf (tej patta)
  • ¼ teaspoon Whole Black Pepper Corns
  • 2 Cloves
  • 1 inch Cinnamon Stick
  • ¼ teaspoon Coriander seeds
  • ½ cup Homemade tomato puree
  • ¼ teaspoon Cumin seeds
  • 2 teaspoon Fresh cream
  • Salt , to taste
Instructions
  1. To begin making the Uttarkhand Style Mixed Bhaddu Dal recipe, firstly soak the urad dal and rajma seperately overnight or for minimum 5 hours.
  2. Heat a pressure cooker with water, cinnamon stick, cardamom and lentils, cover it and let it cook till the cooker releases 4 whistles.
  3. Take a medium wok, heat 2 teaspoons of oil, add bay leaf, cloves, whole black pepper, turmeric powder and red chilli powder. Let it cook for about a minute.
  4. Pour tomato puree and let it cook for another 3 minutes. After 3 minutes, add in the ginger garlic paste. Let it cook till the raw smell vanishes.
  5. Next, add the boiled dal to wok and simmer for 8 minutes then add the cream.
  6. Meanwhile heat a spoonful of oil in a tadka pan, add coriander seeds, cumin seeds and let it cook for about 15 seconds. Pour it over the dal, mix and serve hot.

  • ¼ teaspoon Kalonji (Onion Nigella Seeds)
  • 1 teaspoon Kasuri Methi (Dried Fenugreek Leaves)
  • 1 teaspoon Lemon juice
  • 2 Dry red chilli
  • Salt , to taste
  • ¾ cup Luke Warm Water
Instructions
  1. To begin making the Methi Mushroom Masala recipe, firstly wash the mushrooms, in a bowl mix with curd, red chilli powder and ginger paste. Marinate for 5 minutes.
  2. Soak the leaves in water for 5 minutes, strain and set aside. Heat a small wok with oil, fry the mushrooms and remove after 2 minutes.
  3. In the same pan, add bay leaf, kalonji and ginger and garlic paste. Fry for 1 minute.
  4. Fry the onions for few minutes or till they become soft. Next, add tomato puree, red chilli powder and turmeric powder. Let it cook for about a minute.
  5. After a minute, add warm water, salt and garam masala powder.
  6. Let it boil to a semi thick consistency, now add the mushrooms and soaked and strained dry methi leaves.

  2. Chop the tomatoes, onion and coriander leaves.
  3. Add salt and pepper.
  4. Toss the sprouts and vegetables together with oil and lime juice and rest of the ingredients.
  5. Garnish with green chilly and red pepper.
  6. Serve cold.

Phool Gobi or Cauliflower is one of our favourite vegetable for winter and for a spicy alternative you may always try to make like punjabi restaurant style preparation. Restaurant Style Phool Gobhi Masala Recipe is a semi dry popular vegetarian recipe that pairs well with rice and roti speaks enough for North Indian tasty cuisine. If you want to change the taste keeping the base recipe intact then try with a varied tempering of different cuisine. Shallow fried in mustard oil and having flavours of garlic ginger paste, garam masala and the redness of kashmiri chilli powder, it is mouthful to taste and lovely to eat.

  • 12 Cauliflower (gobi) , cut to clorets

  • 2-1/2 tablespoons Mustard oil , (adjust as per need)

  • 1 teaspoon Ginger garlic paste
  • 2 teaspoons Water
  • 1 cup Onion , finely chopped
  • 1 cup Water
  • ¼ teaspoon Garam masala powder
  • ¼ teaspoon Kashmiri red chilli powder
  • ¼ cup Homemade tomato puree
  • 2 tablespoons Fresh cream
  • 1 teaspoon Ghee
  • 1 Green Chilli
  • 2 teaspoons Cashew nuts , broken
  • Salt , to taste
Instructions
  1. To make Restaurant Style Phool Gobhi Masala Recipe, first clean the florets and toss with salt and turmeric.
  2. Heat a kadai with oil on a medium heat and fry the florets for about 5 minutes or till the raw smell vanishes. Take them out on to a plate.
  3. In the same kadai, add the onions, fry till translucent. Take this in a mixer grinder and make it into a fine paste.
  4. Add bay leaf and cumin seeds in the leftover hot oil, ginger and garlic paste with 2 teaspoon water. Fry for a minute.
  5. Add the fried florets and tomato puree and coat these well.
  6. Immediately add the fried onion paste, kashmiri red chilli powder and 1 cup water, cook for about 5 minutes.
  7. Turn to low flame Keep adding the cream, garam masala powder and ghee. Check for salt seasoning.

  • 2 Organic Avocado
  • ½ Onion chopped(optional)
  • 2 Tomatoes deseeded
  • 1 Garlic pressed

  • ½ cup Cilantro Puree

Instructions
  1. The initial step to make the perfect guacamole recipe, is to pick the right avocado which can be easily scooped with spoon and can be mashed too.
  2. Take a medium glass bowl, scoop out the flesh of avocado and mash it well. Chop jalapeno and tomatoes.
  3. Add lemon juice, garlic, black pepper, cumin powder, green chilli, salt, cilantro puree, jalapeno and tomatoes.
  4. Mix all the ingredients and add oil. Check the salt seasoning.
  5. Serve with a platter full of Dorrito chips and Guacamole.
